Vegetable Stir Fry

 I combined a few recipes to come up with the latest winning recipe in our kitchen! It received 4.9 stars from my husband (and I'm not disagreeing).

I wanted to increase the variety of vegetables that we are eating and bought a daikon radish. I had no idea how to use one, but figured that should be no problem. Cue: the internet search.

I found this article with several suggestions and immediately honed in on the stir fry option.

However, I wanted something more flavourful than just soy sauce, so I continued my internet search to find a recipe that included a stir fry sauce.

I picked this one and found my mouth watering in anticipation.

Here's my final recipe combining the two and the vegetables I happened to have on hand. The beauty of stir fry is that you just chop and throw in the veggies you have.

Veggies:

broccoli

daikon radish

carrot

edamame

zucchini 

Chop as desired. I chose small matchsticks.

Soy sauce marinade:

1/4 c. soy sauce

1/2 c. broth

3 cloves garlic minced

3 tablespoons brown sugar (I use granulated sugar and molasses)

1 teaspoon sesame oil

1 tablespoon cornstarch (I used tapioca starch)

Cook!

Heat olive oil on pan over medium head and toss veggies in when it's hot (you can add the harder veggies first if you like, but I threw them all in at once).

When veggies are softened, crack egg over the pan and stir so that it scrambles.

 Pour soy sauce mixture over the veggies and simmer until it is slightly thickened (or thickened to the consistency that you desire).

Serve over rice.
